Ingredients

  • 1/2 pound of dried chick peas (don’t use the canned chick peas)

  • 1 onion

  • 4 cloves of garlic

  • 1/4 cup of fresh parsley

  • 3 tsp dried cilantro

  • 2 tsp dried mint

  • 1 tsp cumin

  • 1 tsp corriander

  • 1 tsp coarse salt

  • 1/2 tsp cayenne

  • Freshly ground black pepper

  • 1 tsp baking powder

  • 1 TBS flour (preferably chick pea flour)

  • Optional, sesame seeds

Directions

  • Soak chick peas overnight or for 24 hours.
  • Drain and rinse the chick peas.
  • Add chick peas to a pot. Add enough water to cover by at least two inches. Bring to a boil, and then simmer for five minutes.
  • Add to an ice bath to stop the cooking process. Let sit in ice bath for 5 minutes.
  • Rinse and drain chick peas. Add to a bowl.
  • Mix chick peas with onion, garlic, and spices.
  • Add to food processor. Blend in food processor for 40 seconds. If you have some larger pieces left, it’s ok.
  • Mix in baking powder and flour. Optional, mix in sesame seeds. Then add to a bowl with a lid, cover, and place in refrigerator for 20 minutes.
  • Heat air fryer to 350 degrees.
  • Remove falafel mix from refrigerator. Have a bowl of cold water next to you as you form into discs or balls. Wet your hands to help the mixture stay together as you form into balls or discs. Place each ball or disc on the tray of air fryer.
  • Air fry for 15-20 minutes until browned on the outside.
  • Serve with your favorite dipping sauce like tahini or tzanziki.
