New Year’s Black Eyed Peas

Tradition says you should avoid eating certain foods on New Year’s Day, while eating certain foods will bring wealth and luck in the new year, such as ham and black eyed peas. Avoid eating chicken because you don’t want to be pecking in the dirt in the new year! Enjoy this simple black eyed pea salad on your New Year’s Feast.

New Year’s Black Eyed Peas

Ingredients

  • 2 cans black eyed peas

  • 1 onion, diced finely

  • 1 clove garlic, diced finely

  • 1 TBS olive oil

  • Juice and zest of 1 lemon, approximately 1/3 cup

  • 1/4 cup freshly diced parsley

  • Salt and pepper

Directions

  • Drain and rinse the cans of black eyed peas.
  • Add to a sauce pan and cover with water (two inches of water above the top of the black eyed peas).
  • Bring to a boil. Then simmer for about 5 minutes until black eyed peas are tender.
  • Rinse and drain water. Pick out any large pieces of outer layer of the bean.
  • Toss black eyed peas with lemon juice, lemon zest, olive oil, onion, garlic and parsley.
  • Season with salt and pepper.
  • Enjoy immediately, or refrigerate for later. Enjoy at room temperature or cold!

Notes

  • This recipe is great to make the day before so you have less fuss the day of your holiday feast.
  • If you cannot find canned beans, or you have dried black eyed peas, simply soak overnight for at least 12 hours. Then pick up at step one, but when you simmer until tender, it will probably take about 20 minutes instead of five.
