Tzatziki

This traditional and tasty sauce is great for topping a souvlaki sandwich, dipping vegetables, or topping falafel. While you can buy it from the store, it often is tasteless and made with fattening ingredients. Turn fat-free Greek yogurt into this tasty sauce in just a few hours (and only 10 minutes of prep).

Today is Greek Easter (Pascha). We celebrate breaking our Lenten fast with homemade skewers of cubes pork and lamb. These meaty morsels definitely need the creamy, tangy, garlic tzatziki sauce. Make up a batch for your next meat skewer meal.

Ingredients

  • 32 oz. fat-free yogurt

  • 1 English cucumber, skin removed, grated on a box grater

  • 5 cloves garlic, grated

  • 1/2 cup fresh dill fronds, chopped finely

  • 1 TBS of lemon juice (freshly squeezed) and lemon zest

  • 1 tsp kosher salt, divided

  • Black pepper, to taste

Directions

  • Peel cucumber. Using a box (cheese) grater, grate the cucumber into a bowl.
  • Add 1/2 tsp of kosher salt to the grated cucumber. This will help remove excess moisture from the cucumber.
  • Add the cucumber and Greek yogurt to a large piece of cheesecloth. Tie the cheesecloth with a piece of cooking twine, then hang the cheesecloth from a cabinet with a bowl underneath to catch the liquid from the cucumber and yogurt. Keep the cheesecloth hanging for about 4 hours. If you don’t have a lot of time, you can skip this step or strain for less time, but your sauce will be runnier.
  • After 4 hours, empty the yogurt and cucumber into a bowl. Grate the garlic cloves into the bowl using a microplane.
  • Remove the stems from the fresh dill. Chop the fronds finely. Add to the bowl.
  • Add 1 TBS of lemon juice / juice and zest of one lemon to bowl.
  • Add 1/2 tsp kosher salt and dash of black pepper to taste.
  • Mix well. Refrigerate for about 2 hours to let the flavors meld together. (But if you don’t have time, you can still enjoy the sauce as is without waiting)

Notes

  • If you are rushed for time, you can skip some of the steps that require waiting (like draining, or refrigerating). The yogurt, cucumber, dill, and garlic pair well for a tasty sauce. Once you enjoy it on your meat, you won’t want to skip the sauce ever again! Making it homemade is so much tastier than getting it on your gyro from the Diner!
