Tahini Sauce

Tahini Sauce

Ingredients

  • 1/2 cup of tahini

  • Juice and zest of 1 lemon

  • Clove of garlic

  • Pinch of coarse sea salt

  • Pinch of cumin

Directions

  • Juice and zest the lemon into a bowl.
  • Take a mallet and give the garlic one good smash so that the oils are released, but there’s still a whole clove of garlic. Add to bowl with lemon juice.
  • Let the garlic sit in the lemon juice for ten minutes.
  • After ten minutes, fish out the clove of garlic.
  • Add the coarse salt and cumin to the bowl.
  • Using a whisk, slowly add the tahini one tablespoon at a time. You might need to add a dash of ice cold water to thin it. Taste to make sure the proportion of lemon to tahini is to your liking.
