Ingredients

  • 1.5 lbs sea bass cut into fillets

  • 1 TBS Kosher salt

  • 1/2 small red bell pepper, diced

  • 1/2 small bell yellow pepper, diced

  • 1/2 small orange bell pepper, diced

  • 1/2 small green bell pepper, diced

  • 1 small onion, diced

  • 1 clove garlic, diced

  • 1/2 cup Kalamata olives, chopped

  • Juice of 1 lemon

  • 1/2 TBS ground coriander

  • 1/2 TBS garlic powder

  • 1 tsp paprika

  • 1 tsp cumin

  • 1/2 tsp black pepper

  • Non-stick cooking spray

Directions

  • Begin by seasoning the fish with Kosher salt on both sides. Let sit for 20 minutes.
  • While fish is soaking up the salt, mix the coriander, garlic powder, paprika, cumin, and black pepper in a bowl. Set aside 1 TBS of the spice mixture to add to your tapenade; the rest will be used to season the fish.
  • Dice bell peppers, onion, and garlic. Heat a saute pan with non-stick cooking spray and add the bell peppers, onion, and garlic. Saute for a few minutes until softened. Add the 1 TBS of the spice mixture and stir well.
  • While the pepper mixture is cooking, season the fish with the remainder of the spice blend.
  • Add the olives to the tapenade. Leave on a low heat stirring occasionally while you cook the fish.
  • Begin to heat a skillet over a medium heat. Once hot, spray with non-stick cooking spray. Add fish.
  • Let fish cook for about 4 minutes a side depending on how thick your fillets are. You will know when it is done because it will be easy to turn with a spatula. If it is not easy to turn, give it another minute.
  • Cook each side for about 3-6 minutes.
  • When fish is done, season with juice of 1 lemon.
  • Spoon a scoop of tapenade to each piece of fish. Enjoy.

Notes
