Coconut Rice

Coconut Rice

Ingredients

  • 1 cup uncooked rice

  • 1 cup light unsweetened coconut milk

  • 1 cup water

Directions

  • Add rice, coconut milk, and water to pot. Mix well.
  • Bring mixture to a boil over high heat.
  • Once boiling, reduce heat to low and add cover. Simmer for 15 minutes.
  • Let stand for 5 minutes.

Notes

  • We enjoyed coconut rice at The Reef in Epcot. It’s a simple way to transform your boring rice into the base for a delicious feast.
