Purple Cabbage Slow Cooker Chicken Dinner

Ingredients

  • 1 head purple cabbage

  • 1 bell pepper sliced

  • 1 onion sliced

  • 1 can diced tomatoes, undrained

  • 1 can sliced mushrooms, drained

  • 1 TBS garlic salt

  • 1 tsp dried basil

  • 1 tsp dried parsley

  • 1 tsp dried oregano

  • 1 Bay leaf

  • 1/2 tsp cayenne pepper

  • Black pepper to taste

Directions

  • Quarter and core the purple cabbage. Add to slow cooker.
  • Slice the onion and bell pepper. Add to slow cooker.
  • Add diced tomatoes and mushrooms.
  • Mix seasonings together with the exception of the bay leaf.
  • Add half of the seasonings to the slow cooker and use the remaining seasonings to both sides of your chicken breasts.
  • Add chicken breasts to slow cooker and the bay leaf.
  • Cook on low for 6 hours.

Notes

  • You can add other vegetables to the slow cooker – I added some fresh chopped tomatoes.
