Pancakes

This morning, the kids were off from school and wanted pancakes. I decided to treat them to pancakes from scratch. Making pancake batter from scratch is nearly as easy as opening a box – it’s just a few simple ingredients that you whisk together.

Ingredients

  • 2 cups all-purpose flour

  • 1 TBS baking powder

  • 1/2 tsp salt

  • 2 tsp sugar

  • 1.25 cups skim milk

  • 1 egg

  • 3 TBS melted butter

  • Optional, blueberries, chocolate chips, strawberries, bananas, etc.

Directions

  • Mix dry ingredients in a large bowl, preferably with a spout for easy pouring of the batter.
  • In a large liquid measuring cup, measure milk and add egg.
  • Whisk the egg and milk together.
  • In microwave safe bowl, melt the butter for 45 to 60 seconds.
  • Create a well in the center of the dry ingredients. Add the milk and egg mixture. Whisk two to three times just to gently combine.
  • Add the melted butter and whisk until batter forms. Don’t overwhisk.
  • Heat a griddle. Then spray with non-stick cooking spray or a pat of butter.
  • Pour 1/4 cup of batter for silver dollar pancakes. Add optional ingredients at this point, like chocolate chips or thin slices of fruit.
  • Let the batter cook in the pan. Once bubbles begin to form and pop, flip pancake to cook the other side. Cook for 1-2 more minutes.
  • Serve immediately with butter, maple syrup, or whipped cream.

Notes

  • This is a simple recipe that you can adapt by adding many different items, like nuts, smashed bananas, or even pumpkin puree.
