Ingredients

  • 2 pounds of shrimp, cleaned with tails removed

  • 1 mango

  • 1 onion, chopped

  • 2 cloves garlic, chopped

  • 2 TBS soy sauce

  • 2 TBS lime juice

  • 1 TBS honey

  • 1 tsp chilli garlic sauce

  • 1 tsp cider vinegar

  • 1 tsp red curry paste

  • Bunch of Cilantro, chopped

  • Nonstick cooking spray

Directions

  • Dice onion. Add to pot with nonstick cooking spray. Cook on low to sweat down the onion.
  • Once the onion is translucent, add garlic. Cook for 1 more minute.
  • Add soy sauce, lime juice, honey, cider vinegar, chilli garlic sauce, and red curry paste. Stir to combine.
  • Add shrimp. Cook until shrimp are no longer translucent.
  • While the shrimp are cooking, cut your mango into large bite-sized pieces.
  • Add mango, and cook for 1 more minute.
  • Garnish with chopped cilantro. Serve.
