Air Fried Chicken Parmesan

My children love fried food, especially covered in cheese. But of course, I needed to make the recipe a bit healthier. The air fryer helps to give these chicken cutlets that fried taste without the oil. I also make a few other substitutions to make this classic dish healthier, like egg whites rather than eggs. I think it tastes just as good as the original. And no messy oil to have to clean.

Ingredients

  • 2 pounds of boneless chicken breasts or tenders.

  • 2/3 cups of seasoned breadcrumbs

  • 1/2 cup Egg beaters or egg whites

  • 8 oz. tomato sauce

  • 2 cups fat-free mozzarella cheese

  • Salt and pepper

Directions

  • Prepare your chicken breasts. You want thin breasts for easier cooking in the air fryer. I like to butterfly the breasts open. You could pound them out, but it is not necessary. Or just buy the tenders that are great for air frying.
  • Place 1/2 cup of egg whites in a bowl. Season the egg whites with salt and pepper. Mix well. Place the 2/3 cup of bread crumbs in another bowl.
  • I like to use tongs for this next step. Take the chicken breasts and dip into the egg whites, then the bread crumbs. Since my goal is healthier, I just use 1 layer. Feel free to double bread if you’d like.
  • Place in your air fryer. I cook it at 400 degrees for 20 minutes. Depending on if you have a basket or oven-type air fryer, you might need to flip at ten minutes.
  • After 20 minutes, take out of the air fryer, add a scoop of tomato sauce and 1/4 cup of cheese per breast. Return to the air fryer for another five minutes.
