Homemade Caesar Salad

I got a head of farm-fresh Romaine lettuce, so I decided it was time for some homemade Caesar salad dressing. In New Orleans, I had Caesar dressing that was freshly made at my table using raw eggs. Store-bought versions use mayo. I decided to do my own take on Caesar salad dressing by using non-fat Greek yogurt as the base rather than mayo or raw eggs. I also made homemade croutons using Schmidt 6-4-7 bread, which is a “light” bread that doesn’t taste light at all.

Homemade Caesar Salad

Ingredients

  • 1 head Romaine lettuce

  • Sprinkle of Parmesan cheese

  • Salad Dressing
  • 1/2 cup non-fat Greek yogurt

  • 3 cloves garlic finely diced

  • 1 TBS olive oil

  • 1 TBS Dijon mustard

  • 1 tsp Worcestershire sauce

  • 1/4 tsp fish sauce OR 1 anchovy, chopped finely

  • 1/2 cup Parmesan cheese

  • Salt and pepper

  • Croutons
  • 2 slices Schmidt 6-4-7 bread

  • I can’t believe it’s not butter spray

  • Dash of Italian Seasoning

  • Dash of salt and pepper

Directions

  • Clean and cut your romaine lettuce. Make sure it is dry before you assemble the salad.
  • In a bowl, whisk together all of the dressing ingredients.
  • Toast your 2 slices of bread. You can use your air fryer to get the bread even crispier. I air fry the bread for 4 minutes at 400 degrees (check your bread to make sure it doesn’t burn – once you figure out the time, this is a great technique to dehydrate the bread to make croutons). As soon as it is crispy, spray both sides with the I can’t believe it’s not butter spray. Then season with the Italian seasonings, salt, and pepper. Cut the bread into bite-sized squares.
  • Place the lettuce and croutons in a salad bowl. Sprinkle with the parmesan cheese. Toss with the desired amount of dressing, and serve.

Notes

  • I don’t usually have anchovies on hand, so I decided to try fish sauce in the recipe. Although you have to be careful not to use too much, just a dash gave this recipe the umami flavor in a traditional Caesar dressing.
  • Aldi also has its own version of Schmit 6-4-7 bread called “Light and Active.”
  • Although not traditional, I added cucumbers to my salad as pictured.
