Ingredients

  • 2 TBS chia seeds

  • 1/3 cup water

  • 2 sticks vegan butter (I used Country Crock) – room temperature

  • 1.5 cups light brown sugar

  • 1 TBS maple syrup

  • 1 tsp vanilla

  • 3 cups flour, sifted

  • 1 cup oats

  • 2 tsp cinnamon

  • 2 tsp baking soda

  • 1/2 tsp salt

  • 1 cup raisins

Directions

  • Preheat oven to 350 degrees.
  • Mix the chia seeds with the water. Set aside for 15 minutes. It should turn into a pudding consistency.
  • In a mixer, cream vegan butter with brown sugar, maple syrup, vanilla, and the chia seed mixture until smooth.
  • Add the flour in thirds to the mixer and combine.
  • Add the baking soda, salt, and cinnamon, and combine.
  • Add the raisins to the mixer and combine.
  • Scoop out the cookies onto a baking sheet covered in parchment paper.
  • Bake for 10-14 minutes until cookies are browned.

Notes

  • You can use a vegan milk in place of the chia seed pudding if you prefer.
