2 TBS chia seeds
1/3 cup water
2 sticks vegan butter (I used Country Crock) – room temperature
1.5 cups light brown sugar
1 TBS maple syrup
1 tsp vanilla
3 cups flour, sifted
1 cup oats
2 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1 cup raisins
Directions
- Preheat oven to 350 degrees.
- Mix the chia seeds with the water. Set aside for 15 minutes. It should turn into a pudding consistency.
- In a mixer, cream vegan butter with brown sugar, maple syrup, vanilla, and the chia seed mixture until smooth.
- Add the flour in thirds to the mixer and combine.
- Add the baking soda, salt, and cinnamon, and combine.
- Add the raisins to the mixer and combine.
- Scoop out the cookies onto a baking sheet covered in parchment paper.
- Bake for 10-14 minutes until cookies are browned.
Notes
- You can use a vegan milk in place of the chia seed pudding if you prefer.
