Two ingredient bagels

Ever wake up to little kids wanting a fresh bagel, and given there’s a pandemic, you decide, “I don’t need the bagel shop!”? Well that was my Saturday. I often use this recipe as pizza dough, or chicken pot pie topping, but others swear by it as a bagel. So I gave it a try. Thirty minutes later, we had fresh bagels. And we learned that “happiness is sharing a warm bagel . . .”

Ingredients

  • 1 cup Self-rising flour

  • 1 cup non-fat Greek yogurt

  • Optional, Trader Joe’s Everything Bagel Seasoning

Directions

  • Preheat oven to 375 degrees.
  • Line baking sheet with parchment paper.
  • In bowl combine self-rising flour with Greek yogurt.
  • Once dough forms, empty onto floured counter. Knead dough with your hand.
  • Divide dough evenly into fourths.
  • Roll each fourth into a skinny tube. Then loop together to form a ring.
  • Add bagel onto lined baking sheet making sure to leave room because the dough will spread as it cooks. Optional, add bagel seasoning, sesame seeds, or your favorite bagel topping.
  • Bake for 23 minutes or until golden brown.

Notes

  • No self-rising flour? Don’t worry! Just take all-purpose flour and add 1 and 1/2 tsp of baking powder and 1/4 tsp of salt.
  • Need pizza dough? Use the same recipe, but roll flat. Add sauce and cheese for a homemade pizza treat.
