Sweet Potato Casserole

Ingredients

  • 4 large sweet potatoes

  • 1 can fat-free sweetened condensed milk

  • 3 eggs

  • 1 TBS cinnamon

  • 1 tsp nutmeg

  • 1/4 tsp cloves

  • 1 tsp salt

  • half bag of mini marshmallows

  • Non-stick cooking spray

Directions

  • Preheat oven to 350 degrees.
  • Bring large pot of water to boil.
  • Peel and quarter sweet potatoes.
  • Add sweet potatoes to boiling water. Cook for about 15 minutes until sweet potatoes are soft.
  • Add sweet potatoes (drained) to large mixing bowl.
  • Using hand blender/immersion blender, blend the sweet potatoes.
  • Add condensed milk, eggs, and seasonings to the sweet potatoes. Blend.
  • Spray baking pan with non-stick cooking spray. Add sweet potatoes.
  • Bake for 45 minutes.
  • Add mini marshmallows to pan. Continue baking paying careful attention to make sure the marshmallows do not burn. Cook for about ten minutes until marshmallows brown.

Notes

  • You can make this ahead by mixing together. Bake on the day that you need it beginning at Step 8.
