Strawberry Cheesecake

Farm fresh strawberries that we picked ourselves this afternoon were a delicious addition to this cheesecake I made earlier in the day in honor of Father’s Day. Nothing says love more than this cake since the sliced red strawberries look like hearts! And Dad will love that this cheesecake is lighter than the full-fat version.

Ingredients

  • Graham cracker crust

  • 3 cups non-fat Greek yogurt

  • 1 package Jell-O sugar-free cheesecake pudding

  • 2 eggs

  • 1 tsp vanilla extract

  • 3 tsp Truvia

  • 1/2 cup Cool Whip

  • 10 strawberries, sliced.

Directions

  • Preheat oven to 350 degrees.
  • In large bowl, whisk together yogurt, Jello-O, vanilla, eggs, and Truvia.
  • Once combined, add to pie shell.
  • Bake for 25-30 minutes, or until toothpick comes out clean.
  • Allow to cool. Once completely cool, add Cool Whip topping.
  • Add strawberries to top of Cool Whip. Enjoy.

Notes

  • You can play with the flavor of pudding that you use. One idea might be to use banana pudding with bananas on top.
