Slow Cooker Chicken with Tomatoes and Zucchini

This is a simple dump and go meal that you can use with simple pantry staples or make with fresh vegetables. Either way, you don’t have much fuss and can have dinner waiting for you when you get home from work.

Ingredients

  • 4 chicken breasts

  • 1 pint of cherry tomatoes or 1 can of diced tomatoes

  • 12 oz. of tomato sauce

  • 1 can fat free evaporated milk

  • 1 can of stewed zucchini in tomato sauce (or 2 fresh zucchini cut into half moons)

  • 1 TBS garlic salt

  • 1 tsp of Italian seasoning

  • 1 pinch of crushed red pepper

  • Black pepper

Directions

  • In slow cooker, add chicken breasts.
  • Season with garlic salt, Italian seasoning, crushed red pepper, and black pepper.
  • Add tomatoes and zucchini to basin of slow cooker.
  • Mix evaporated milk with tomato sauce.
  • Top chicken with tomato sauce mixture. Cover slow cooker.
  • Cook on low for six hours.
  • Serve over rice, or with potatoes.

Notes

  • You can throw in any vegetable you have – like bell peppers, mushrooms, or onions.
