Slow Cooker BBQ Pulled Chicken

This simple recipe is great for the work week. Do five minutes of preparation in the morning, and come home to a delicious meal at night! I used sugar-free BBQ sauce, but you can use whatever you have available.

Ingredients

  • 3/4 cup sugar-free BBQ Sauce (I used Walden Farms)

  • 3/4 cup sugar-free ketchup (I used Veggie Made Sugar-free Ketchup, but I have also used Heinz No Added Sugar Ketchup)

  • 1/2 cup apple cider vinegar

  • Apprx. 2 lbs chicken breasts, about 3 breasts

  • 1 purple onion, sliced

  • 1 TBS BBQ seasonings

Directions

  • Whisk together the BBQ sauce, ketchup, and apple cider vinegar.
  • Slice onion and place it in the base of the slow cooker.
  • Add chicken breasts to the base of the slow cooker.
  • Season the chicken breasts with the BBQ seasoning on all sides, using tongs to make sure the top and bottoms are seasoned.
  • Pour the BBQ sauce mixture on top of the chicken and onions.
  • Cook on low for six hours.
  • After six hours, shred the chicken with two forks.
  • Serve on a roll, or with cole slaw (or both).

Notes
