This easy salad dish is a great make-ahead side dish for any night of the week. It pairs well with many dishes, like pulled pork.

Ingredients

  • 1 package of pre-shredded cole slaw mix

  • 1 small onion, diced

  • 1 bell pepper, julienned

  • 1 cup cilantro, chopped

  • 2 stalks celery, diced

  • 1 apple, julienned

  • 3 scallions, chopped

  • 1 jalapeno, seeded, and minced

  • 1 orange, juiced and zested

  • 1 cup rice wine vinegar

  • 2 TBS soy sauce

  • 1 tsp sesame oil

  • 1/8 tsp crushed red pepper

Directions

  • Cut vegetables and apple. Place in serving bowl.
  • Add cole slaw mix.
  • To a large measuring cup, add rice wine vinegar, orange zest, orange juice, sesame oil, soy sauce, and crushed red pepper. Whisk dressing.
  • Add dressing to the vegetables and apple, and toss well. Place in refrigerator until ready to serve.

Notes

  • This recipe can be made a few days in advance, or right before dinner.
  • You can add other things to the slaw to taste, like carrots, chopped garlic, or broccoli slaw.
