This delicious dessert is super simple to make, but everyone will think it took you hours to make!
Ricotta Pie

Store bought pie dough
2 cups ricotta cheese
2 eggs plus 1 yolk
1/2 cup sugar
1/4 cup brown sugar
1/2 cup heavy whipping cream
Zest of lemon
1 tsp vanilla extract
1 TBS Grand Mariner
1/2 tsp cinnamon
Directions
- Preheat oven to 350 degrees
- Spray a pie dish with non-stick cooking spray
- Bring pie dough to room temperature, then add to pie dish.
- In a Ninja blender, add ricotta, eggs, yolk, sugar, brown sugar, whipping cream, lemon zest, vanilla, Grand Mariner, and cinnamon. Blend until creamy, about 1 minute.
- Pour mixture into pie dish
- Bake for 40 minutes or until lightly browned and the filling is 160 degrees. It may be jiggly but it will firm as it cools.
- Allow pie to cool then enjoy!
Notes
- It’s best to use the full-fat version of the cream and ricotta.
- Garnish with powdered sugar, berries, or just enjoy as is!
