This delicious dessert is super simple to make, but everyone will think it took you hours to make!

Ricotta Pie

Ingredients

  • Store bought pie dough

  • 2 cups ricotta cheese

  • 2 eggs plus 1 yolk

  • 1/2 cup sugar

  • 1/4 cup brown sugar

  • 1/2 cup heavy whipping cream

  • Zest of lemon

  • 1 tsp vanilla extract

  • 1 TBS Grand Mariner

  • 1/2 tsp cinnamon

Directions

  • Preheat oven to 350 degrees
  • Spray a pie dish with non-stick cooking spray
  • Bring pie dough to room temperature, then add to pie dish.
  • In a Ninja blender, add ricotta, eggs, yolk, sugar, brown sugar, whipping cream, lemon zest, vanilla, Grand Mariner, and cinnamon. Blend until creamy, about 1 minute.
  • Pour mixture into pie dish
  • Bake for 40 minutes or until lightly browned and the filling is 160 degrees. It may be jiggly but it will firm as it cools.
  • Allow pie to cool then enjoy!

Notes

  • It’s best to use the full-fat version of the cream and ricotta.
  • Garnish with powdered sugar, berries, or just enjoy as is!
