Pickled Beets

Why open a can, when you can make beets yourself in just 15 minutes? Pickled beets are a healthy side dish for any weeknight meal.

Ingredients

  • 4 large beets, peeled and sliced or diced (depending on your preference)

  • 3 cups of water

  • 1.5 cups of apple cider vinegar

  • 1/2 cup white distilled vinegar

  • 3 TBS honey

  • 1 TBS kosher salt

  • 2 tsp mustard seeds

  • 1/2 tsp black peppercorns

Directions

  • Combine the water, vinegars, honey, salt, mustard seeds, and peppercorns in a pot that will fit all of your beets. Bring to a boil.
  • Peel and slice your beets into desired size.
  • Add beets to boiling liquid mixture.
  • Simmer beets in liquid for 10 minutes.
  • Enjoy immediately, or chill in the refrigerator until ready to serve.
  • Storage tip: you can jar these using the pickle method on my site. Otherwise, the beets should stay preserved for 2 weeks in the refrigerator as long as there is enough pickling liquid to cover them.

Notes

  • You can add other vegetables to your pickling liquid, like slices of onion.
