This healthy snack is easy to make from the seeds inside of pumpkins or squash.

Ingredients

  • Seeds from Pumpkin or Squash

  • 2 TBS salt

  • 1 TBS coarse sea salt

Directions

  • Preheat oven to 350 degrees.
  • Fill a sauce pan with water. Add salt to water. Mix well. Bring water to a boil while you proceed to the next step.
  • After removing seeds from inside of pumpkin or squash, wash them well in a colander to remove any residual pumpkin or squash.
  • Add cleaned seeds to the boiling water. Simmer seeds for 5 minutes.
  • Line baking sheet with parchment paper. Drain seeds. Place on parchment paper. Sprinkle the coarse sea salt on the seeds.
  • Roast seeds for 30 minutes or until seeds begin to turn brown.
  • Enjoy seeds as a snack or sprinkle in your yogurt.
