No Fuss Chicken Teriyaki

In less than 20 minutes, I was able to assemble 3 breakfasts, 3 lunches, and 1 dinner for 4, while also getting the kids on the school bus (with 2 seconds to spare). This simple crock pot meal lets you look forward to a healthy, home-cooked dinner after a long day at the office.

Ingredients

  • 4 Chicken breasts (boneless and skinless)

  • 2 cups chicken broth (or 1 bouillon cube with 2 cups of water)

  • 1/2 cup teriyaki sauce

  • 1 tsp freshly grated ginger

  • 1 TBS granulated garlic powder

  • Salt and pepper

Directions

  • Add chicken breasts to base of slow cooker / crock pot.
  • Season with granulated garlic, salt, and pepper.
  • Mix broth with teriyaki sauce in large measuring cup.
  • Grate ginger into the sauce, and mix well.
  • Add the sauce mixture to the chicken breasts.
  • Cook on low for 6.5 hours.
  • Serve over rice or with vegetables.

Notes

  • If you are home during the last hour of cooking, you can add broccoli into the slow cooker so the vegetable will finish with the meat.
