No Bake Peach Pie

You can make this easy peach pie without needing to turn on your oven on a hot day. It pairs well with vanilla ice cream. A store-bought graham cracker crust saves you time.

Ingredients

  • 4-6 Peaches

  • Store-bought graham cracker crust

  • 1/4 cup water

  • 1 TBS lemon juice

  • 2 TBS corn starch

  • 1/4 cup brown sugar

  • 1 tsp vanilla extract

Directions

  • Quarter two of your peaches.
  • In Ninja blender, add quartered peaches and water. Puree the peaches.
  • Add the puree to a pot.
  • Create a slurry of the lemon juice and corn starch by mixing together. Mix the slurry into the pot with the puree. Stir well to avoid clumps.
  • Add brown sugar and mix well. Bring mixture to a boil, stirring occasionally.
  • Once boiling, turn the pot down to a simmer.
  • Meanwhile, thinly slice the remaining peaches. Add to the pot with the puree. Keep stirring, and cook until your peaches are softened, about 15 minutes.
  • Pour into the graham cracker crust. Put into the refrigerator for 2 hours for the pie to set up.
