Mediterranean Potatoes

This recipe pairs well with my recipe for Chicken Skewers (also known as souvlaki). My grandmother would make these potatoes in the oven in olive oil. I cut the fat by replacing olive oil with non-stick cooking olive oil spray.

Mediterranean Potatoes

Ingredients

  • 1 lbs small potatoes

  • 1 TBS lemon juice

  • 1 TBS granulated garlic

  • 1 TBS non-salt herb seasoning (like Mrs. Dash)

  • Salt and pepper

  • Non-stick cooking spray (I prefer the olive oil spray for this recipe)

Directions

  • Preheat oven to 400 degrees.
  • Cut potatoes into quarters.
  • Mix seasonings together.
  • Spray potatoes with non-stick cooking spray. Toss with seasonings. Add lemon juice. Toss together so the lemon juice, cooking spray, and seasonings are evenly coating the potatoes.
  • Bake for 35 minutes or until potatoes are golden brown with a soft center.

Notes

  • If you choose to use olive oil, heat the oil in the roasting pan while you but the potatoes. Then carefully put the potatoes in the pan (being careful the oil does not burn you). Then roast for 35 minutes. This method produces a hard crust with a delicious fluffy inside to the potato.
