Instant Pot Chicken and Spinach Alfredo Risotto

Ingredients

  • 1 lbs. chicken cut into 1-2 inch cubes

  • Garlic salt

  • Black pepper

  • 1 cup rice

  • 2 cups water

  • 1 package frozen spinach, defrosted with extra liquid removed

  • 1 jar alfredo sauce (16 oz.)

Directions

  • Dice chicken into cubes. Season with garlic salt and black pepper.
  • In the basin of the instant pot, add rice and water. Stir to combine.
  • Add spinach and chicken to instant pot.
  • Cover with alfredo sauce. Stir to combine all ingredients.
  • Seal instant pot. Cook on high pressure for 9 minutes.
  • Once cooked, vent to release pressure. Stir. Serve and enjoy.

Notes

  • I used Sonoma Gourmet Creamy Spinach Alfredo Sauce to really bring out the spinach flavor.
  • You can save time by buying uncooked diced chicken.
