Instant Pot Beef Stroganoff

This simple yet filling dish is a perfect work from home meal. Ready in about a half hour with just a few breaks to add ingredients. My friend Erica told me about this recipe with the noodles cooking in the Instant Pot. I was a bit incredulous that everything would cook in one pot, so I tried it out! My daughter and husband gave it two thumbs up!

Instant Pot Beef Stroganoff

Ingredients

  • 2 lbs beef, like London broil (sliced against the grain while raw) or stew cubes

  • 4 cups sliced mushrooms, like cremini

  • 3 cups beef broth

  • 2 cloves garlic, minced

  • Non-stick cooking spray

  • 2 TBS Worcestershire sauce

  • 2 TBS flour

  • 12 oz. egg noodles (uncooked)

  • 1/2 cup sour cream

  • 1 TBS corn starch

  • Salt and pepper to taste

Directions

  • Slice or cube beef. Season with salt and pepper.
  • Slice mushrooms, and mince garlic.
  • Turn Instant Pot to sauté mode. Once hot, spray with non-stick cooking spray. Add mushrooms and garlic.
  • Cook for 2-3 minutes. Then add beef. Stir well. Let beef brown for 2-3 minutes. Then turn off sauté mode.
  • Add beef broth and Worcestershire sauce. Stir well.
  • Add lid to Instant Pot ensuring the seal is in the sealed position.
  • Turn Instant Pot to high pressure for 15 minutes.
  • Once the Instant Pot cooks for 15 minutes, manually release the pressure.
  • Add egg noodles to Instant Pot. Stir well. Replace lid, and turn Instant Pot to high pressure for 4 minutes and use the “keep warm” option.
  • Manually release the pressure. Then ladle out 1 cup of sauce. Whisk in the corn starch and sour cream to create a sauce. Then add the sauce back into the meat, noodle, and mushroom mixture stirring well to combine. Enjoy!

Notes

  • If you have never used an Instant Pot before, the times are not exact. Fifteen minutes of high pressure might actually take 20 minutes or longer depending on how long the Instant Pot takes to pressurize. From start to finish it took me about 40 minutes to prepare this meal. To manually release the pressure, I like to use a towel to soak up the steam.
