Blueberry Muffins

Freshly picked blueberries make a delicious breakfast treat! My daughter had her birthday today, and when she woke up she asked for blueberry muffins for breakfast. So I got to work making these simple, delicious muffins. My healthy substitutions were unsweetened applesauce for the majority of the sugar plus 3 tablespoons of honey. Instead of oil, I used non-fat Greek yogurt.

Ingredients

  • 1.5 cups of flour

  • 2 tsp baking powder

  • 1/2 tsp salt

  • 1 egg

  • 1/2 cup unsweetened applesauce

  • 1/2 cup non-fat Greek yogurt

  • 1/3 cup of non-fat milk

  • 3 TBS honey

  • 1 pint of blueberries

  • Non-stick cooking spray

Directions

  • Preheat oven to 400 degrees.
  • Clean your blueberries and set in colander to drain any water.
  • Sift flour into large mixing bowl.
  • Add salt and baking powder.
  • Mix together.
  • To the mixing bowl, add the applesauce, egg, Greek yogurt, and milk.
  • Spray tablespoon with non-stick cooking spray. Measure out the honey with the measuring spoon, and add to mixing bowl. (It will come right out of the spoon).
  • Stir ingredients. Once combined, add the blueberries and gently fold them into the mixture.
  • Spray your muffin tins with non-stick cooking spray.
  • Scoop into muffin tins.
  • Bake for 20-25 minutes until toothpick comes out clean.
