Apple-Broccoli Slaw Salad

This tasty salad is easy to prepare. Apples are the secret star to this dish. Whip up your own vinaigrette to cut out some of the extra calories from oil. Using prepared broccoli slaw saves time. This salad can be prepared as a quick side dish or main course after work.

Use prepared broccoli slaw to save time in the kitchen.

Ingredients

  • 1 bag – Broccoli slaw (See note)

  • 1 apple, finely sliced

  • 1 small onion, finely diced

  • 1 cucumber, cut into quarter moons

  • 1 clove garlic, grated

  • 1 TBS olive oil

  • 2 oz. cider vinegar

  • 1 tsp honey

  • 1 tsp Dijon mustard

  • Salt and pepper

Directions

  • Prepare vegetables and place in a dish with a cover.
  • In salad dressing shaker or small bowl, add olive oil, vinegar, honey, mustard, garlic, salt, and pepper. Whisk together.
  • Pour dressing over salad. Mix well. Cover and refrigerate for 20 minutes. Serve.

Notes

  • If you cannot find prepared broccoli slaw, use the food processor to julienne 2 stems of broccoli, 1 carrot, and 1/4 head of cabbage.
