Ingredients

  • 2 lbs chicken breasts

  • 16 oz. peach salsa

  • 1 TBS fajita seasoning

  • Salt

Directions

  • Add chicken breasts to basin of slow cooker.
  • Season with salt and fajita seasoning.
  • Pour jar of peach salsa on top of chicken.
  • Cook on low for 6-7 hours, or on high for 3-4 hours.
  • Shred chicken. Serve over rice.

Notes

  • You can use frozen chicken in this recipe. Cut the frozen chicken into cubes to ensure even cooking.
  • Use any leftovers as the filling for enchilladas.
