Easy Bruschetta

This recipe is a great appetizer or “salad” dish to accompany your main course. Because you are making crostini toasts from the bread, this is a great way to use leftover bread. Or you can make it from store made crostini crackers or fresh bread.

When I was a law clerk in Jersey City, there was an Italian deli called Cupo’s. Unfortunately, they have now retired, but every Tuesday and Thursday, they would serve a delicious dish called Bruschetta Chicken. The line would be out the door. I would order the large so that I could have lunch and dinner out of the same meal. You can take the bruschetta topping below and add it to grilled chicken (or breaded chicken) to enjoy a taste of Cupo’s!

Ingredients

  • Bruschetta Topping
  • 1 large ripe tomato

  • 1 small purple onion

  • 10 leaves of fresh basil

  • 1 tsp granulated garlic

  • 1 TBS balsamic vinegar

  • 1 tsp olive oil

  • 1/4 cup parmesan cheese

  • Salt and pepper

  • Toast for base of bruschetta
  • 1 loaf French bread

  • 2 tsp olive oil (if you can find garlic or basil infused olive oil, use that)

  • 2 cloves of garlic cut in half

Directions

  • Bruschetta Topping – make ahead
  • Dice the tomato into small bite-sized pieces. Add to a bowl with a lid.
  • Dice the onion into small bite-sized pieces. Add to the bowl.
  • Chiffonade the basil leaves. Add to the bowl.
  • Add balsamic vinegar, olive oil, parmesan cheese, and salt and pepper.
  • Mix. Put on the lid to the bowl. Put in the refrigerator for an hour.
  • Bruschetta Toast
  • Preheat oven to 400 degrees.
  • Thinly slice your French bread. Place on a baking sheet.
  • To a small bowl, add the olive oil.
  • Using a pastry brush, brush the olive oil onto both sides of the bread.
  • Using the cut side of the garlic cloves, rub the cloves on both sides of the bread.
  • Bake the bread slices for 3-5 minutes or until crispy.
  • Assembling the bruschetta
  • You can either serve the crostini along side the salad, or add a scoop of salad mixture to each crostini slice.

Notes

  • This is a great party recipe because you can make the salad and crostinis in advance.
