Apple Broccoli Slaw

This tasty fruit and vegetable salad is ready in minutes. You can make it ahead of time as the flavors will develop in the fridge.

Apple Broccoli Slaw

Ingredients

  • 1 bag of broccoli slaw

  • 1 apple, sliced thin

  • 2 scallions, diced

  • 1 small purple onion, finely diced

  • Apple Cider Vinaigrette
  • 3 TBS apple cider vinegar

  • 2 TBS dijon mustard

  • 1 TBS honey

  • 1 clove garlic, finely diced

  • 1 tsp fresh ginger, grated

  • 1 tsp soy sauce

  • Ground pepper

  • Non-stick cooking spray – see pro tip.

Directions

  • In large bowl with a lid, add bag of broccoli slaw.
  • Finely dice the onions and scallions, then add to your bowl.
  • Assemble vinaigrette by whisking all the ingredients together: apple cider vinegar, dijon mustard, honey, ginger, garlic, and ground pepper. (See pro tip for easily removing the honey from the tablespoon).
  • Thinly slice the apple. Add the apple slices to the slaw. Immediately add the vinaigrette to evenly coat the applies. The apples need the vinegar in order to prevent oxidizing and browning. I like to toss with tongs to make sure each slice gets coated. Then mix the slaw together.
  • Let slaw set in the fridge, or serve immediately.

Notes

  • Pro tip – to easily remove all the honey from your tablespoon measure, I like to spray the tablespoon with some nonstick cooking spray. The honey will then slid right off the spoon.
