Tilapia with Roasted Tomatillo Salsa

Ingredients

  • 1 lbs tilapia

  • Fajita seasoning

  • Salt and pepper

  • Nonstick cooking spray

  • Roasted Tomatillo Salsa
  • 1 lbs tomatillos

  • 2 cloves garlic

  • 1/2 purple onion

  • 2 jalapenos

  • 1 TBS lime juice

  • Handful of cilantro

  • Salt and pepper

Directions

  • To minimize your time, it’s best to start the salsa first. Then as the vegetables are in the broiler, start seasoning your fish. Start cooking the fish when the vegetables have five minutes left in the broiler.
  • Season tilapia with fajita seasonings, salt, and pepper.
  • Spray griddle pan or skillet with nonstick cooking spray. Sear the tilapia on both sides until cooked through, about 4 minutes each side.
  • Roasted Tomatillo Salsa
  • Cover a baking sheet with aluminum foil.
  • Remove tomatillos from husks. Slice in half and place on baking sheet.
  • Slice jalapenos in half. If you like it mild, remove the seeds. Place jalapeno halves on baking sheet.
  • Cut the purple onion in half. Place one half of the onion on the sheet pan with the skin and all. Remove skin of other half, and place it in Ninja blender or food processor.
  • Add garlic cloves with the skin onto baking sheet. Broil the tomatillos, jalapenos, onion, and garlic for 10 minutes, or until charred.
  • Remove the skin from the onion and garlic, and place all items, juice and all into the blender or food processor.
  • Add lime juice, cilantro, and salt and pepper to blender or food processor. Blend until smooth.
  • Serve salsa over the tilapia.
