Strawberry Graham Cracker Pie

With no added sugar, this pie is a healthy treat to bring to a Memorial Day BBQ. This “no bake” treat is refreshing on a hot, summer day.

If we weren’t in quarantine, I would have made it as a Red, White, and Blue Pie, by simply replacing half of the strawberries with blueberries.

Ingredients

  • 5 cups fresh strawberries, quartered

  • 1/2 cup no added sugar jelly, e.g. Polaner’s All Fruit (“but don’t call it jelly”)

  • 1 graham cracker pie crust (you can use the low fat version to make it healthier)

  • Non-fat whipped topping (or your choice of whipped cream)

Directions

  • In a large bowl, add your jelly and stir it up until it is smooth.
  • Make sure your strawberries are dry from washing. Leave in a colander to get rid of any extra liquid from washing. Quarter the strawberries.
  • Add strawberries to the bowl. Carefully toss the jelly with the strawberries until strawberries are evenly coated.
  • Add strawberry mixture to graham cracker crust. Cover and let set in the refrigerator for half hour.
  • Serve with a dollop of whipped topping. Enjoy!

Notes

  • This recipe works with any fresh berry. Mix them up if you would like.
