Sea bass is a white, flaky fish. The recipe is a satisfying meal when you are short on time. The spices pair well with the so-simple-to-make olive and bell pepper tapenade. A healthy and tasty dinner is ready in just 30 minutes.
Spiced Sea Bass with Bell Pepper Tapenade

1.5 lbs sea bass cut into fillets
1 TBS Kosher salt
1/2 small red bell pepper, diced
1/2 small bell yellow pepper, diced
1/2 small orange bell pepper, diced
1/2 small green bell pepper, diced
1 small onion, diced
1 clove garlic, diced
1/2 cup Kalamata olives, chopped
Juice of 1 lemon
1/2 TBS ground coriander
1/2 TBS garlic powder
1 tsp paprika
1 tsp cumin
1/2 tsp black pepper
Non-stick cooking spray
Directions
- Begin by seasoning the fish with Kosher salt on both sides. Let sit for 20 minutes.
- While fish is soaking up the salt, mix the coriander, garlic powder, paprika, cumin, and black pepper in a bowl. Set aside 1 TBS of the spice mixture to add to your tapenade; the rest will be used to season the fish.
- Dice bell peppers, onion, and garlic. Heat a saute pan with non-stick cooking spray and add the bell peppers, onion, and garlic. Saute for a few minutes until softened. Add the 1 TBS of the spice mixture and stir well.
- While the pepper mixture is cooking, season the fish with the remainder of the spice blend.
- Add the olives to the tapenade. Leave on a low heat stirring occasionally while you cook the fish.
- Begin to heat a skillet over a medium heat. Once hot, spray with non-stick cooking spray. Add fish.
- Let fish cook for about 4 minutes a side depending on how thick your fillets are. You will know when it is done because it will be easy to turn with a spatula. If it is not easy to turn, give it another minute.
- Cook each side for about 3-6 minutes.
- When fish is done, season with juice of 1 lemon.
- Spoon a scoop of tapenade to each piece of fish. Enjoy.
Notes
- This recipe goes well with a side of quinoa or rice.
