Slow Cooker Beef and Broccoli

This is the perfect prep-ahead meal to have dinner on the table when you get home from work. Marinate your beef the night before. Dump in the slow cooker, and beef is done when you get home! The flavor is just like beef and broccoli from your Chinese take-out restaurant.

Ingredients

  • 1.5 lbs London broil cut of beef

  • 1 cup of beef broth

  • 1/2 cup soy sauce (low sodium)

  • 2 TBS light brown sugar

  • 1 clove of garlic, minced

  • 1 tsp freshly grated ginger

  • 1 tsp fish sauce

  • 1 tsp sesame oil

  • Dash of black pepper

  • Dash of crushed red pepper

  • Optional, 1 TBS corn starch

Directions

  • In large mixing cup, whisk together broth, soy sauce, brown sugar, garlic, ginger, fish sauce, sesame oil, black pepper, and crushed red pepper.
  • In a bowl with a lid, add London broil. Top with broth mixture. Place lid on bowl. Refrigerate overnight.
  • Morning of, add London broil with marinade to basin of slow cooker. Cook on low for 6 hours.
  • Optional, once done cooking, take 1 cup of juices from slow cooker and add to a sauce pan. Whisk in corn starch. Bring to a boil, mixing often. Then simmer for 5 minutes, stirring occasionally.
  • Serve with steamed broccoli and rice.

Notes

  • You can add additional vegetables into the basin of the slow cooker, like onions and carrots. I left mine simple like a traditional beef and broccoli.
