Mango Shrimp

2 pounds of shrimp, cleaned with tails removed
1 mango
1 onion, chopped
2 cloves garlic, chopped
2 TBS soy sauce
2 TBS lime juice
1 TBS honey
1 tsp chilli garlic sauce
1 tsp cider vinegar
1 tsp red curry paste
Bunch of Cilantro, chopped
Nonstick cooking spray
Directions
- Dice onion. Add to pot with nonstick cooking spray. Cook on low to sweat down the onion.
- Once the onion is translucent, add garlic. Cook for 1 more minute.
- Add soy sauce, lime juice, honey, cider vinegar, chilli garlic sauce, and red curry paste. Stir to combine.
- Add shrimp. Cook until shrimp are no longer translucent.
- While the shrimp are cooking, cut your mango into large bite-sized pieces.
- Add mango, and cook for 1 more minute.
- Garnish with chopped cilantro. Serve.
