Leftover Chicken Fiesta Bake

If you have leftover chicken, rice, or corn, dinner can be ready in just 35 minutes – with only 5 minutes of prep time. That gives you a half hour to yourself to do things like wash dishes, help with homework, or dare I say, relax! This is a great recipe to bring new life to boring leftovers.

Ingredients

  • 2 Chicken breasts, diced

  • 2 cups rice

  • 1 can black beans

  • 1 can of corn, or leftover ear of corn with kernels removed

  • 1 tsp cumin

  • 1 tsp onion powder

  • 1 tsp granulated garlic

  • 1 cup nonfat Greek yogurt

  • 1 cup salsa

  • 2 cups fat-free cheddar cheese

Directions

  • Preheat oven to 350.
  • Dice your leftover chicken.
  • Mix all of your ingredients in casserole dish, reserving 1 cup of cheese for topping.
  • Top with cheese. Cover with aluminum foil
  • Bake for 25 minutes. Remove foil and cook for another 5 minutes.
