Coconut Rice

1 cup uncooked rice
1 cup light unsweetened coconut milk
1 cup water
Directions
- Add rice, coconut milk, and water to pot. Mix well.
- Bring mixture to a boil over high heat.
- Once boiling, reduce heat to low and add cover. Simmer for 15 minutes.
- Let stand for 5 minutes.
Notes
- We enjoyed coconut rice at The Reef in Epcot. It’s a simple way to transform your boring rice into the base for a delicious feast.
