Instant Pot Chicken with an Apricot-Ginger Glaze

Healthy turmeric gives this dish a golden glow to make any child want to eat their dinner. My daughter calls it Golden Chicken – it’s like she’s hit the jackpot of dinners.

After a long afternoon arguing a case before the Appellate Division, and then rushing to get the kids to the tutor, I threw this meal together in five minutes, hit “delay start” on the instant pot, and then came home to a ready dinner! This is a perfect meal when you are on the go.

When I got home, I quickly finished the sauce and added delicious bok choy to the instant pot to finalize this one-pot meal.

Instant Pot Chicken with an Apricot-Ginger Glaze

Ingredients

  • 2 lbs boneless chicken breasts

  • 1/4 cup soy sauce

  • 5 TBS No added sugar apricot jam (like Polaner All Fruit)

  • 2 tsp turmeric

  • 1 TBS freshly grated ginger

  • Dash of crushed red pepper

  • 1 TBS corn starch

  • Bunch of bok choy

Directions

  • In a big measuring cup, whisk together apricot jam, soy sauce, crushed red pepper, ginger, and turmeric.
  • Turn instant pot to saute mode. Heat sauce for a minute, then add the chicken breasts.
  • Turn instant pot to high pressure for 11 minutes. If you want to delay the cooking time, hit delay start at this point. Let chicken cook.
  • Once the time counts down, manually release pressure before taking off the lid to the instant pot. Remove chicken breasts from basin of instant pot but leave the liquid to create the sauce.
  • Whisk into sauce, 1 TBS of corn starch.
  • Turn instant pot to saute mode. Let sauce thicken for 2-3 minutes.
  • Saute bok choy with sauce for about 5 minutes until wilted.
  • Serve chicken and bok choy with a side of rice for a delicious meal.

Notes

  • Because the time on the instant pot does not begin until it reaches full pressure, 11 minutes takes more than 11 actual minutes! While time will vary, it takes about half hour to cook the chicken from the time you turn on the high pressure option until completed.
