2 Chicken breasts, diced
2 cups rice
1 can black beans
1 can of corn, or leftover ear of corn with kernels removed
1 tsp cumin
1 tsp onion powder
1 tsp granulated garlic
1 cup nonfat Greek yogurt
1 cup salsa
2 cups fat-free cheddar cheese
Directions
- Preheat oven to 350.
- Dice your leftover chicken.
- Mix all of your ingredients in casserole dish, reserving 1 cup of cheese for topping.
- Top with cheese. Cover with aluminum foil
- Bake for 25 minutes. Remove foil and cook for another 5 minutes.
