Turkey Shawarma Burgers

1 lbs 99% fat-free ground turkey
1 medium-sized zucchini, grated (about 1 cup of grated zucchini)
1/2 red onion, finely diced
1 TBS shawarma seasoning – see note
Avocado spray oil
Favorite buns
Directions
- Grate zucchini.
- Finely dice red onion.
- Combine in large bowl, ground turkey, grated zucchini, diced onion, and shawarma seasoning. Mix but do not overwork the meat. Divide into four patties. Form each 1/4 of the meat into a patty.
- Heat a skillet that has a cover (the cover will help the meat cook evenly without overcooking the turkey).
- Once water dances across the skillet, you know it is the right temperature.
- Spray a thin coating of avocado oil or non-stick cooking oil onto skillet. Add patties. Place cover on the skillet.
- Don’t touch the meat for four minutes!
- After four minutes, flip the patties. Cover and let cook for another 2 minutes. Check to make sure they are fully cooked and remove from heat.
- Serve over your favorite bun.
- Garnish as desired. Some ideas: jalapenos, scallions, hot sauce, BBQ sauce, Asian slaw (see my recipe), etc.
Notes
- Shawarma seasoning is one of those spice blends that depends on the chef. I used McCormick’s premixed shawarma seasoning. However, you can make your own. Try: 1 TBS cumin, 1 TBS coriander, 1 TBS paprika, 1 TBS sumac, 1/2 TBS turmeric, 1/2 TBS cardamom, 1 tsp crushed red pepper flakes, 1/2 tsp ground allspice, 1/8 tsp nutmeg. Mix together, and then place in a spice bottle for when you need it next. You only need 1 TBS of seasoning for each pound of meat.
- Adding zucchini to your low fat meat is a great way to add juiciness without the fat.
