Sweet Potato Casserole

4 large sweet potatoes
1 can fat-free sweetened condensed milk
3 eggs
1 TBS cinnamon
1 tsp nutmeg
1/4 tsp cloves
1 tsp salt
half bag of mini marshmallows
Non-stick cooking spray
Directions
- Preheat oven to 350 degrees.
- Bring large pot of water to boil.
- Peel and quarter sweet potatoes.
- Add sweet potatoes to boiling water. Cook for about 15 minutes until sweet potatoes are soft.
- Add sweet potatoes (drained) to large mixing bowl.
- Using hand blender/immersion blender, blend the sweet potatoes.
- Add condensed milk, eggs, and seasonings to the sweet potatoes. Blend.
- Spray baking pan with non-stick cooking spray. Add sweet potatoes.
- Bake for 45 minutes.
- Add mini marshmallows to pan. Continue baking paying careful attention to make sure the marshmallows do not burn. Cook for about ten minutes until marshmallows brown.
Notes
- You can make this ahead by mixing together. Bake on the day that you need it beginning at Step 8.
