This simple recipe is great for the work week. Do five minutes of preparation in the morning, and come home to a delicious meal at night! I used sugar-free BBQ sauce, but you can use whatever you have available.
Slow Cooker BBQ Pulled Chicken

3/4 cup sugar-free BBQ Sauce (I used Walden Farms)
3/4 cup sugar-free ketchup (I used Veggie Made Sugar-free Ketchup, but I have also used Heinz No Added Sugar Ketchup)
1/2 cup apple cider vinegar
Apprx. 2 lbs chicken breasts, about 3 breasts
1 purple onion, sliced
1 TBS BBQ seasonings
Directions
- Whisk together the BBQ sauce, ketchup, and apple cider vinegar.
- Slice onion and place it in the base of the slow cooker.
- Add chicken breasts to the base of the slow cooker.
- Season the chicken breasts with the BBQ seasoning on all sides, using tongs to make sure the top and bottoms are seasoned.
- Pour the BBQ sauce mixture on top of the chicken and onions.
- Cook on low for six hours.
- After six hours, shred the chicken with two forks.
- Serve on a roll, or with cole slaw (or both).
Notes
