4 large beets, peeled and sliced or diced (depending on your preference)
3 cups of water
1.5 cups of apple cider vinegar
1/2 cup white distilled vinegar
3 TBS honey
1 TBS kosher salt
2 tsp mustard seeds
1/2 tsp black peppercorns
Directions
- Combine the water, vinegars, honey, salt, mustard seeds, and peppercorns in a pot that will fit all of your beets. Bring to a boil.
- Peel and slice your beets into desired size.
- Add beets to boiling liquid mixture.
- Simmer beets in liquid for 10 minutes.
- Enjoy immediately, or chill in the refrigerator until ready to serve.
- Storage tip: you can jar these using the pickle method on my site. Otherwise, the beets should stay preserved for 2 weeks in the refrigerator as long as there is enough pickling liquid to cover them.
Notes
- You can add other vegetables to your pickling liquid, like slices of onion.
