4-6 Peaches
Store-bought graham cracker crust
1/4 cup water
1 TBS lemon juice
2 TBS corn starch
1/4 cup brown sugar
1 tsp vanilla extract
Directions
- Quarter two of your peaches.
- In Ninja blender, add quartered peaches and water. Puree the peaches.
- Add the puree to a pot.
- Create a slurry of the lemon juice and corn starch by mixing together. Mix the slurry into the pot with the puree. Stir well to avoid clumps.
- Add brown sugar and mix well. Bring mixture to a boil, stirring occasionally.
- Once boiling, turn the pot down to a simmer.
- Meanwhile, thinly slice the remaining peaches. Add to the pot with the puree. Keep stirring, and cook until your peaches are softened, about 15 minutes.
- Pour into the graham cracker crust. Put into the refrigerator for 2 hours for the pie to set up.
