This recipe is a great use of overripe bananas. It also jazzes up plain pancakes.
The first time I had Bananas Foster was in New Orleans. It was a delicious, buttery, sweet addition to vanilla ice cream. Then I had it over Belgium waffles with whipped cream. It was even better than the original. So I decided to take the sauce and put it over pancakes. It turned out well so I wanted to share.
Bananas Foster Pancakes

3 overripe bananas
1/4 cup butter
3/4 cup light brown sugar
1 tsp cinnamon
1/2 tsp vanilla
3 TBS spiced rum
Directions
- Slice the bananas into thin slices.
- In a sauce pan, add the butter, sugar, cinnamon, vanilla, and rum. Bring to a boil stirring constantly.
- Let boil for 2 minutes. Then turn the heat to a simmer.
- Add the bananas. Stir and cook for an additional 2 minutes.
- Serve over pancakes, waffles, or your favorite ice cream.
Notes
- I have made this recipe using Swerve brown sugar substitute, but it is better with real brown sugar.
