Beet Greens

Farm fresh beets come with the “tops”. These are great greens to saute and enjoy. Don’t throw out those “tops”! Quick, easy, and healthy.

Beet Greens

Ingredients

  • Beet greens

  • 2 cloves of garlic, minced

  • 1/4 tsp of red pepper flakes

  • Juice and zest of half a lemon

  • Nonstick cooking spray

Directions

  • Cut beet greens from red stems into bited-sized pieces. See note.
  • Mince garlic
  • In saute pan on low heat, spray with non-stick cooking spray. Coat garlic. Let cook for 1-2 minutes.
  • Then add beet greens and red pepper flakes.
  • Cook until wilted on low heat.
  • Once cooked, add zest and juice of 1/2 lemon. Serve and enjoy!

Notes

  • You can also eat the stems. I find them too bitter, though, so I just use the leaves.
  • I like to use non-stick cooking spray to save on calories. There is a non-sticking olive oil phrase that I like to use when sauteing.
