This creamy stew is a hit with kids and adults. Just a few simple ingredients provides a filling, yet nutritious, meal.
Creamy Chicken Stew with Leeks and Summer Squash

2 lbs chicken breasts, diced
1 TBS corn starch
1 TBS garlic salt
Black pepper
2 leeks, (white and light green parts only) sliced into thin rounds and cleaned well (see note)
2 summer squashes cut into thin half moons
1 TBS white cooking wine with lemon
1 TBS Dijon mustard
1.5 cups chicken broth
2 TBS light sour cream
1 tsp dried thyme
Non-stick cooking spray
Directions
- Start by cleaning your leeks (see below).
- In a large bowl, combine the garlic salt, corn starch, and ground black pepper.
- Dice the chicken adding to the bowl with the corn starch mixture.
- When you are finished dicing the chicken, toss to evenly coat the chicken with the corn starch mixture.
- Heat a large pot. Add some non-stick cooking spray. Then add the chicken. Cook for 2 minutes for each side at medium heat.
- Slice the summer squash.
- Heat a sauté pan. Spray with non-stick cooking spray.
- Add leeks and summer squash to the sauté pan at low heat to sweat down the vegetables.
- Once the chicken is done browning, add white wine and scrape up any brown bits.
- Add broth. Turn heat to high. Bring to a boil. Then let simmer for 15 minutes or until chicken is cooked adding the vegetables to the stew once they are softened.
- Stir in mustard, sour cream, and thyme.
- Enjoy!
Notes
- Cleaning your leeks: it is imperative that you clean your leeks well. Leeks grow in sandy soil, so it is easy to miss a few grains if you do not properly clean the leeks. I find the best way to clean them is to rinse before you cut them. Fill a bowl with cold water. Then cut into rounds placing the rounds into the bowl as you cut. Toss the rounds in the bowl to loosen the soil. Strain in a colander. Then place the leeks in the bowl with fresh water. Let sit for ten minutes as you cut the chicken. Strain again, and the leeks should be clean.
