Ingredients

  • Air-fried chicken ingredients
  • 1.5 lbs boneless, skinless chicken tenders

  • 1 TBS egg beaters or 1 egg whisked

  • 2 TBS corn starch

  • 1 TBS granulated garlic

  • 1 TBS onion powder

  • 1 tsp kosher salt

  • 1 tsp black pepper

  • Sauce ingredients
  • 1.5 cups of chicken broth

  • 1 TBS corn starch

  • 4 TBS soy sauce

  • 2 TBS rice wine vinegar

  • 1 dried chili pepper or 1/4 tsp of crushed red pepper

  • 2 cloves garlic, minced

  • 2 TBS honey

  • 1 in of fresh ginger, freshly grated, or 1 tsp of ground ginger

  • Non-stick cooking spray

  • 2 scallions, diced, for garnish

Directions

  • Turn air fryer to 400 to preheat. (Mine counts down to let me know when it is ready).
  • In one shallow bowl, whisk the egg or add the egg beaters.
  • In another shallow bowl, mix together corn starch, granulated garlic, onion powder, salt, and pepper.
  • Dredge each chicken tender first in the corn starch mixture, and then in the egg. Add each tender to the air fryer basket.
  • Once you have dredged each tender, air fry for six minutes. Then flip and air fry for another six minutes. [Pro tip, when you put your chicken in the air fryer, you can start your side dish like, rice and steamed broccoli so everything finishes at the same time.]
  • As the chicken is cooking, start your sauce. Make a slurry of the liquid ingredients and corn starch, by whisking the corn starch into the broth, soy sauce, and rice wine vinegar.
  • In a saute pan or wok, saute the minced garlic, chili pepper/crushed red pepper, and ginger with some non-stick cooking spray.
  • Add the corn starch slurry to the pan. Turn to high heat. Whisk in the honey into the pan and keep whisking until the sauce boils. Boil for 3 minutes. Then turn down the heat to low.
  • Add the air-fried chicken to the pan and toss in the sauce. Cook for another two minutes.
  • Add diced scallions as a garnish and serve.

Notes

  • This meal goes great over rice with a side of steamed broccoli.
