What a month! It was a blur of briefs, hearings, and 2 published decisions. I could not catch my breath! So for my first post in a while, here’s an easy side dish for any night where you need a quick veggie. I turned plain broccoli into a cheesy, breaded delight – without actually going through the effort of making a breading. Read on for some great, tasty shortcuts!
Broccoli Crumble

3 heads of broccoli, cut into florets
Non-stick cooking spray
Garlic salt and pepper
2 slices of bacon
1/2 cup of bread crumbs
1/4 cup of Parmesan cheese
Zest and juice of 1 lemon
Directions
- Preheat oven to 350 degrees.
- Slice broccoli into florets and place on baking sheet pan. Do not overcrowd the baking sheet. Use a second baking sheet if needed.
- Spray with non-stick cooking spray.
- Season broccoli with garlic salt and pepper.
- Bake for 15-20 minutes or until tender.
- While the broccoli is baking, begin by rendering the bacon in a frying pan. I use a low heat so that the fat renders out, but the bacon becomes crispy.
- Once bacon is crispy, place on a paper towel to absorb the excess grease.
- Leave a teaspoon or so of the bacon fat in the pan. Then add the breadcrumbs and parmesan cheese to the frying pan. Cook over a low heat until breadcrumbs become crispy.
- Add zest of lemon to the breadcrumbs.
- Cube the bacon into tiny bites of bacon. Add to the breadcrumb mixture.
- When broccoli is tender, pull out of oven and season with the lemon juice.
- Then add the broccoli to a bowl and toss with the bread crumb mixture. Serve.
- Enjoy your cheesy, bacony, delicious broccoli!
Notes
- Any breadcrumbs will work – Italian seasoned, Panko – whatever you have on hand.
- In a pinch, I have made my own breadcrumbs, by taking 4 slices of bread, toasting them, and then stick in the food processor. Instant breadcrumbs!
